Shopska Salad

Do you need something healthy for your diet or just something to go well with your steak? Well, we have this suggestion for you! It’s the Shopska Salad* recipe!

Ingredients:

4 tomatoes

2 cucumbers

2 roasted peppers or fresh green peppers

a bit of parsley

2 table spoons of chopped onion

1/2 pound of white feta cheese

a bit of salt,vinegar and oil

How to make?

Chop the vegetables in small pieces. Put them in a big bowl, then add the salt, vinegar and oil and stir well.

Bon appetite!

 
*The salad is a traditional Bulgarian dish, named after the citizens of the Bulgarian capital city Sofia who are called "shopi".

Ingredients:

1 large eggplant
1/4 cup tahini, plus more as needed
3 garlic cloves, minced
1/4 cup fresh lemon juice, plus more as needed
1 pinch ground cumin
salt, to taste
1 tablespoon extra virgin olive oil
1 tablespoon chopped fresh flat-leaf parsley
1/4 cup brine-cured black olives, such as kalamata

How to make?

  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  2. Place eggplant on baking sheet, and make holes in the skin with a fork. Roast it for 30 to 40 minutes, turning occasionally, or until soft. Remove from oven, and place into a large bowl of cold water. Remove from water, and peel skin off.
  3. Place eggplant, lemon juice, tahini, sesame seeds, and garlic in an electric blender, and puree. Season with salt and pepper to taste. Transfer eggplant mixture to a medium size mixing bowl, and slowly mix in olive oil. Refrigerate for 3 hours before serving.

However, ready-made pizza is not healthy at all while the one you can get directly on your door step is quite expensive. This is why we found an amazing solution for you! It’s the mini pizza recipe!

Ingredients:

Sliced bread

Tomato sauce

Yellow cheese

Salami/ Ham

Mushrooms/Corn/Pickles/etc

How to make?

Put some tomato sauce on each on of the bread slices. Put few pieces of salami or ham . Add some corn, mushrooms or pickles – anything that you like and cover them with cheese. Bake in pre-heated over for a couple of minutes. Usually takes about 15-30 minutes but you will know when they are ready when the cheese melts perfectly on the slice.

To avoid burning the bread, cover the bottom of the backing dish with foil!

Ingredients:

2 satchets of rice (to serve 4)

1 can of corn

1 can of peas

3 eggs

 

How to make?

Boil the rice. Fry the eggs and when they are ready add the peas and the corn and stir. After about 3-5 minutes, add some salt and then add the rice. Stir again.

This is how easy it is! You can also add some chichen or some noodle but it’s all up to you!

Ingredients:

1 large ripe pineapple

1 large or 4 small firm tomatoes

2 green peppers

1 red onion

2 lemons or 3 limes depending on your preferences

a pinch of salt and black pepper

How to make?

1. Slice the pineapple in the middle vertically starting from the top (leave the leaves on).

2. Cut the pineapple from the shell, cut it in cubes and set aside in a mixing bowl.

3. Slice the green peppers and the onion in thin strips, cube the tomatoes, and mix with the pineapple.

4. Juice the lemons, add salt and pepper, stir and pour the dressing over the salad, mix together. Use the two hollowed pineapple halves for serving bowls.

Ingredients:

3 chopped tomatoes

3 chopped red peppers

1 chopped onion

2 table spoons of oil

400g white feta cheese

3 eggs

a bit of parsley, salt & pepper

 

How to make?

1. Put the oil in a frying pan and heat it

2. Add the onions and the peppers and cook until onions are golden

3. Add the tomatoes and cook for additional 3 minutes

4. Add the cheese and eggs and cook for another 2-3 minutes

5. Sprinkle with parsley before you serve

Many recipes include adding up potato mash or serving it with the ready meal. Yet, many people do not have the patience or the time to prepare it themselved and therefore, they use instant one (which most of the time tastes like chemicals or “plastic”). Here’s an idea how to make the instant mashed potato taste like real one!

First – read the “how to make” instructions for the instant mash you’re using. Put the mixture in a pan and use the magic skills of the oven.  Add some salt and about 150ml less boiling water than the instuctions say. Stir and add about 150ml hot milk. Stir again and add a some butter (a spoon or a bit more). Stir until you break down all the lumps. If part of the mash mixture hasn’t dissolved – add  a bit more hot milk and stir.

Jam Cheese Macaroni

Are you struggling to find good and healthy recipes for your children?  I can help you. This is my first suggestion: simple/cheap and most importantly tasty.

Ingredients:

1 package of macaroni

jam

1 package of mature cheddar cheese

1 table spoon of oil

How to make?

First, take a big pot. Add  1 table spoon of oil, then boil some water on the hob.  When the water starts to bubble, add the macaroni and stir occasionally. The macaroni should be ready in 10 minutes. Once they are boiled properly, add some cheese on top of them and microwave them for 1 minute so that the cheese can melt and then add some jam. My favorite type of jam is strawberry but you can experiment with cherry/apricot or whatever other flavor you prefer.

Peanut butter and fresh basil leaf sandwich

For a little twist on the traditional peanut butter sandwich try this simple but healthy snack for a quick and easy solution to that rumbly tummy.

Ingredients:

2 slices of bread

Peanut butter

Fresh basil leaves

How To Make?

First, spread the peanut better about half a centre meter thick over one slice of bread, try and use brown or granary bread as a healthier option if your children are open to the idea as it is higher in fibre which is good for digestion and also releases energy slower than white bread. Again for a healthier option try to use whole meal peanut butter as it has less sugar. Then lay the fresh basil leaves over the top and place the other slice of bread on top. Cut up your sandwich in your child’s favourite shapes and serve.
